Microwave Bread and Butter Pickles - THM

I love bread and butter pickles but there is way too much sugar in most mixes. Since I have been doing Trim Healthy Mama, I have cut out all sugar but that doesn't mean I want to cut out all my favorite foods. What is a girl to do except experiment with recipes and come up with one that works.  I had a recipe for microwave bread and butter pickles that I got from a friend a long time ago but it called for Splenda, which is unhealthy and not on plan. I tweaked it and came up with one that is so good I was eating the pickles hot instead of putting them in the fridge and waiting for them to cool down! Really, I was!

Presenting Microwave Bread and Butter Pickles that are THM friendly ~

Peel and slice 2 small cucumbers then place in 2 qt microwave glass bowl 
Slice one small onion and add it to the bowl
In a separate measuring cup mix 1/2 cup white vinegar with 3/4 tsp pure stevia ( I used NOW brand), 
also add 1 tsp salt, 1/2 tsp mustard seed, 1/4 tsp celery seed, 1/4 tsp turmeric and mix.
Pour vinegar mix over cucumber slices and stir. 
Microwave on high for 7 1/2 to 8 minutes, until cucumbers are crisp tender, stir a couple times while cooking. Allow pickles to cool and then transfer to a pint canning jar and keep in the fridge.

  3. I am so glad you posted this!! I pinned immediately! My little Annie loves Bread and Butter Pickles but I haven't been buying them because of the sugar. I bet this would make kickin' awesome relish!!

  4. I hope she likes these! My son doesn't like bread and butter pickles but saw these and said, oh yum pickles. Then he took a bite and said oh yuck they are bread and butter! Ha ha, I loved it :) At least I knew they tasted like they were supposed too! I cut some up and put in my tuna today as a sub for relish!!
