Trim Healthy Eating Diary - Day 5

Monday begins my fifth day of doing a food diary and I must say, I have really been enjoying it. I hope you have too.
For breakfast this morning we made Gwen's Low Carb Pancake recipe and they were good but I messed them up somehow. I don't know what I did, but they were very thick. So thick my son said it looked like sausage patties cooking.


Yeah, way too thick but I pressed on, cooked them and we ate them. They really weren't too bad, but I will try again sometime and see if I can figure out what happened.



You have probably figured out that I am not a purist. I like things to be natural when possible but sometimes convenience wins out, ok, a lot of the time. I was having pancakes and I wanted syrup, so I went with some sugar free syrup I had in the cabinet. I also topped them with butter, lots of butter. My daughter is still following THM with me and has really been watching what I eat and she said, "Mom, that's a lot of butter!" To which I replied, "I can have butter with THM, so I AM!"

I didn't get any pictures of lunch and I am almost ashamed to tell you this, but we had grilled cheese again for lunch. Yeah, I know, but they are good! I fixed my boy's sandwiches with homemade whole wheat bread and my girlie and I enjoyed ours with Joseph's lavash bread. 

Then in the afternoon for our snack I made pimento cheese! It was so yummy, I had to make more lavash chips to go with it and my oldest son was not being very patient and just kept sticking his finger in the bowl to eat the cheese!  


For dinner I experimented making stuffed bell peppers because we have an abundance from our garden right now. My youngest son thought it looked fun and helped me make dinner. These are his hands mixing up the beef mixture.


Okay, this next picture is to show you what not to do - although at the time it sounded like an excellent idea. It's not! I thought I would use my muffin pan and it would hold the peppers up nicely, which it did by the way. The problem is that I did not cut the bottom of the peppers and the beef was really fatty and I had grease everywhere. It filled the muffin cups and it was just not pretty.


It was my first attempt, so I guess I will just learn from my mistakes. They turned out okay but I'll find a better way next time. Ds and I also made a veggie tray with cucumbers, bell peppers, cauliflower and cherry tomatoes to serve with it. I used Gwen's Ranch Dip mix for the dip and we had cottage cheese as well.


I'm sorry some of the photos aren't really very pretty but sometimes the best I can do is grab my phone and take a quick snapshot. I'm sure you understand. 

For dessert I had more of my pumpkin torte thing that I had left in the fridge.

I was going to make this my last day, but tomorrow I have a mostly E day planned and thought it might be a good idea to do one more day since I don't normally eat too many E meals.
