All about grains

I recently listened to the CD "Bread of Idleness" by Sue Becker, from the Bread Beckers. I also read her article about whether or not it is necessary to soak grains. After reading that article, a huge weight was lifted from my shoulders as I once again felt at ease with baking bread, muffins and waffles without first soaking my grains. I encourage each of you to read that article if you haven't already.

After listening to her FREE CD, I am more convicted than ever that I need to be grinding our own grain. I know that not everyone can afford too, for the longest time I couldn't. Now, I don't think we can afford not to!  There are so many health benefits, so many cures for common problems such as constipation, allergies, congestion and more; how can I ignore it any longer. Besides, if I do a price comparison on the price of wheat berries and the flour  I would get from those, compared to the flour I am currently buying, wheat berries are cheaper. Also, I could buy organic berries even cheaper than I am buying unorganic flour. So after the initial investment of the grain mill, I will actually be saving money buy grinding my own grains.

I have been wanting a grain mill for years, this is not a sudden whim or just the latest thing out there. I have been waiting and waiting to be able to get one. However, I wish that I would have just really saved money to put toward a grain mill years ago and I would have been able to get one long ago. I never laid out a plan or saved toward one, I just always kept "wanting" one.  I am looking at the Nutrimill and the Wondermill . Do any of you have either of these, or have any advice for me? I am leaning toward the Nutrimill. Although I have gotten alot of information from the Bread Becker site and I appreciate it all very much, I am probably going to buy my mill through Lynn's Bread.  I am planning this simply because she is about an hour from me, I can drive there and actually see it and touch it before I buy it. I can also speak to her and ask any questions I have. She also has grain there I can purchase which will save shipping charges. I have gotten to speak with Lynn before at our local homeschool convention; she has had a booth there the last several years. I have been checking wheat prices online and so far the best I have found is through Azure Standard; therefore, after I initially get started, I will probably order my wheat from there. They have a couple different drop sites close to me.

If anyone has any suggestions or comments, please let me know. I would love to hear your experiences in this area.

    I will be sure to let everyone know when I get a grain mill. I'll probably do so much baking those first few days, I'll gain 10 pounds!
