Salisbury Steak and Mashed Cauliflower THM-S

I love when I can take one of our family favorite meals and make it healthier and compatible with Trim Healthy Mama guidelines.  This past week I did this with a recipe I got from Crystal over at the Family Homestead. I absolutely love her website and her blog, I have learned more from her than anyone else on the internet over the last several years. She is amazing! 
Okay, onto the recipe - which is why you are reading this in the first place, right?

Have you missed salisbury steak with gravy and mashed potatoes? Well, this may just be your answer to that problem. 
Salisbury Steak - S

2 lbs hamburger
1/2 cup oat flour
1 tsp seasoning salt
2 eggs

gravy- 
6 Tbsp butter
6 Tbsp oat flour
3 tsp beef bouillon granules (equal to 3 cubes)
2 cups almond milk
1/2 cup water

Combine meat, oat flour, seasoning salt and eggs in a large bowl. Form into 8 patties and lay in a large baking pan (I use a 9x13). Bake at 350 for 20 minutes and drain off any fat. Pour gravy over the top and bake another 20 minutes. 

Gravy- melt butter in a sauce pan and add oat flour. When it is hot and bubbly and mixed well, add the beef bouillon, milk and water. Stir over medium high heat until thick and bubbly. Let cook about 3 more minutes. I always make my gravy while the patties are in the oven for the first cooking time.


Now you need something yummy to go with your steak and gravy right? But, we don't want to ruin the slimming factor by eating white potatoes so let's substitute with some yummy mashed cauliflower. Even my pickiest son loves these and asks for seconds - and he KNOWS its cauliflower! This recipe came from a friend and I tweaked it to work for us.

Mashed Cauliflower Bake
2 bags frozen cauliflower
1/2 stick butter
8 oz cream cheese
1/4 cup sour cream
8 oz cheddar cheese

Steam the cauliflower until soft, drain well. Place cauliflower and all ingredients except cheese in a food processor or blender. Mix well, add in a handful of cheese and mix again. Pour into a 9x13 baking dish and top with the remaining cheese. Bake at 350 for 20-30 minutes, until cheese is melted.
If you want to lick the spoon, I won't tell - I do it too right after I scrape all the bits out of the blender!

I timed it so that I baked the salisbury steak (for the second cooking) and the cauliflower at the same time which worked out perfectly and dinner was all ready at the same time.

This is a delicious, filling, home cooked comfort meal that went over very well with my family of picky eaters. You would never know it was healthy!
 If you are worried about the oat flour, I figured the nutrition info to double check the carb count in the steak and it is approximately 6 grams of carbs for one steak with the gravy.
