Peanut Butter Cookies - THM S

These peanut butter cookies are so soft and yummy, no one will ever guess they are sugar free and healthy for you. 

Peanut butter cookies:

1/2 cup butter
1/2 cup peanut butter
1 cup erythritol or xylitol
2 eggs
1/2 tsp vanilla
1 cup almond flour
1 tsp baking powder
1/4 tsp salt

Preheat oven to 350*, cream together butter, peanut butter and xylitol. Beat in eggs one at a time then add the vanilla. Combine the flour, salt and baking powder then mix into the peanut butter mixture. Drop by spoonfuls onto cookie sheet. Bake 12-14 minutes but do not over bake. As soon as the edges start browning remove them from the oven, let cool on cookie sheet for 5 minutes, then transfer to cooling rack.
This made 24 cookies (I used a medium cookie scoop) and I figured the carb count to be 1 carb per cookie, however they are high in fat so we still don't want to do over do them - like I did!
