Grocery shopping and food prep

Today was our normal shopping day and I was able to get some great deals on produce. One of our local stores (Aldi's) had red and yellow peppers 3 for .99, green peppers 3 for 1.29, cauliflower for .79, grape tomatoes for .99 and several more. I have been trying to eat more fresh fruits and veggies but have not been doing a very good job of it. I decided today was a good day to try again. I loaded up lots of great produce and headed home. Now usually grocery shopping wears me out and by the time I get home it is all I can manage to get the groceries unloaded and put away before crashing on the couch to recoup. However, praise God, today was different and I had energy to spare. I normally put perishables away first, but today I did things backward. I put all my nonperishables away first, other than my juice and dairy. Then before putting away the produce, I cleaned and cut almost everything. Now it is all in the fridge, cleaned and ready to eat. It is such an amazing feeling and I know without a doubt it will encourage us to eat more and waste less. To my shame, some produce usually rots in the bottom drawer of my fridge, yuck! (My goats don't mind, but I do.)


I also made some dill dip for the veggies. I snacked the ENTIRE time I was doing my food prep, yummy! My girlie came into the kitchen to get bites several times as well.




Here are the veggies that wouldn't fit on my tray in ziploc bags, all cleaned and cut up. I only did one zucchini and I left the cucumbers whole. I also only did one head of cauliflower for now.




Here are my watermelon and cantaloupe. I also have apples and bananas in a bowl on the kitchen table.

Snack time and dinner prep will be so much better with all of this already done. It saved so much time to do it all at once instead of at each snacktime or dinnertime. I am so happy I had the energy to get it all done.
