Time to make the donuts

 Sometimes you just have to fix a fun, yummy junkfood breakfast. I take a little comfort knowing that these are healthier than store bought donuts. My daughter had a friend spend the night last night and it was just us three girls this morning for breakfast so I wanted to do something fun for them. Enter homemade donuts.

Okay, so they aren't the prettiest donuts in the world but they sure are yummy and the girls loved them!
My recipe comes from my "Make a Mix Cookery" cookbook with a couple slight changes. My changes our in parentheses. They are easy to make and hopefully the directions aren't too confusing since I added my thoughts in there :)

4 cups master baking mix (I don't use the one in the book, I use one from a different cookbook or you could use a bisquick kind of mix)
1/2 cup sugar (I use raw sugar)
1/2 tsp cinnamon
1/2 tsp nutmeg
2 tsp vanilla
2 eggs
2/3 milk or water (I use raw milk)
vanilla glaze
oil for frying

Vanilla glaze:
2 cups powdered sugar
1 tsp vanilla
enough milk to make glaze consistency to your liking

Heat oil to 375 degrees (I just use my deep fryer). In a bowl combine baking mix, sugar, cinnamon and nutmeg. In mixing bowl (I use my kitchen aid), mix together egg, vanilla and milk or water.. Add the dry ingredients while mixing. Combine until well blended. On a lightly floured surface, knead dough about ten minutes ( I don't knead this long, just until it isn't sticky). Roll out to 1/2 inch thick (I never measure this either), cut with a floured doughnut cutter (I use a 2 in biscuit cutter and then just poke a hole in the middle and stretch it with my fingers). Fry in the oil about 1 minute on each side, until golden brown. Drain on paper towels or cooling rack. Dip warm doughnuts in glaze and serve.

This recipe is doubled from the orginal recipe and makes about 32 doughnuts. The dough is really sticky, so I usually add a little extra flour after all other ingredients while it's mixing; just however much it needs to be able to handle it. If you have little bits of dough left but not enough to roll out and make more doughnuts, just drop them in the oil and have some doughnut "holes".
