Here's a recipe I came up with the other night, most of the family loved them. It is a protein/fat meal.
1 15oz can salmon (remove bones and skin)
1 small onion, diced
1/2 cup crushed pork rinds
1/2 cup grated parmesan cheese
salt and pepper to taste
Mix all ingredients together, form patties and fry in olive oil. This made 6 small to medium patties.
